Chicken Piccata
Don't be silly of course we ate! I just didn't photograph everything. Last week actually, I made this great steak from a Bobby Flay recipe a friend recommended. It's easy. That recipe is HERE actually, for those that want steak but don't want the fuss of a grille. The pan searing is pretty easy. And don't be scared of the filet, you can use a different cut of meat. Oh and I skipped the poached egg. It was great without it.
But tonight, I wanted to try my hand at chicken piccata. I ordered it at a restaurant a few months ago and loved it. Which is odd because when I first tried capers, I thought they were really bitter. But in this ... I love them.
So I dug up this recipe of Giada's. Also very easy. She doesn't say it, but I recommend beating the chicken pretty thin before you cook. Other than that ... it was excellent. I served over angle hair pasta.
