A handful of things today. First, last weekend (week before?) I made the delicious, scrumptious crab cakes shown at left. They are easy, and wonderful, and completely delicious. First step is to buy real crab meat, which will run you about ten dollars. Not cheap. So not an every day affair these crab cakes.
Recipe:
Prep Time: 30 min (plus chilling)
Cook time: 15 min
1 1/2 pounds crab meat (get the real stuff, its pricey but better)
3 cups panko (Japanese bread crumbs)
6 scallions, green and white parts chopped separately
1/4 cup chopped parsley
2/3 cup plus 1/2 cup mayo (I used miracle whip)
salt and pepper
1/4 teaspoon cayenne pepper
4 large eggs, beaten
6 tbsp extra-virgin olive oil
1 tablespoon white wine vinegar
1. Mix the crab, 1/2 cup panko, scallion whites, celery, parsley, 2/3 mayo, 1/2 tsp salt, black pepper and cayenne. Refrigerate for 30 minutes.
2. Form the mixture into patties about one inch thick. In a bowl, mix remaining 2 1/2 cups panko with salt. Coat the patties with panko, then eggs, then the panko again.
3. In a heavy skillet, heat half of the olive oil over medium heat. Add the patties and cook until golden on each side. About 3 minutes on each side.
4. Combine the remaining mayo, vinegar and 1/3 cup scallion greens. Serve two cakes per person alongside sauce.
You won't be sorry!
On a different night ... we finally used our fireplace! It was mah-velous!

So that's it from here. Tonight is Super Bowl and I'm going for the Pats. Lewis thinks the Giants are going to win. My response to that is you don't go 18-0 all season and lose in the Super Bowl. Especially if you play in the NFC. And you're Tom Brady. And you have Randy Moss, Wes Welker, and Daunte Stallworth out there to catch for you. And you're not Eli Manning. Who threw over 20 interceptions in the regular season.
But hey, maybe I'll eat my words.
Happy watching.
